Happy Monday everyone! The sun is out again which is great news although it's still in the 30s...ick!
I started my morning with a Van's toaster waffle alongside an egg white and Comice pear topped with cinnamon and a bit of PB. I seriously think that I'm addicted to these pears - they're crunchy, not too sweet, and have that classic, almost gritty pear texture that I love!
Then, I got busy prepping my dinner for tonight - my 1st adventure with crock pot cooking!! I've modified a recipe from Real Simple and will be sharing the details tonight. In the mean time, here's a "Before" picture.
Since I was already in the kitchen, I decided to go ahead and pack my lunch while I was at it. I threw together a salad with carrots and the remaining bell pepper from my dinner recipe. I also needed to use up the last of my leftover beans so I heated them up with 1/8c rice (just enough for texture) and salsa and garlic. That should hold me over until I get home from work this afternoon!
Off to brave the cold and jump start my day! It's Day 2 mindful eating and healthy exercise!
